Fit for the Gods of Olympus

This is a very simple recipe inspired by a pizza I fell in love with years ago.
Crispy on the outside, soft on the inside crust, slathered in honey, a couple pieces of pepperoni and a touch of cheese. That was it, and it changed my pizza world forever. I still day dream about this pizza.

My version captures the same sweet and savory idea, with a little bit of added spice.
Lina’s Italian Market dough, half of the portion, flattened and brushed with chili oil. Bake at 475 for 5 or so minutes. Add thin slices of guanciale and drizzle with date and honey reduction. Crumble goat cheese all over and bake for another 7 or so minutes. When the guanciale is nice and crispy and the edges are just turning golden, the pizza is done. Top with fresh arugula.
Date and honey reduction: I soaked 4 or 5 dates in warm water overnight and into the next day. I added a little bit more water and the dates to a pot and simmered on medium for 30 minutes until reduced. Remove from heat and add a teaspoon of honey.
